in South Texas (Corpus Christi, Kingsville, Realitos, Riviera) and I can assure you that I have eaten my fair share of good Mexican food. Fajitas were paper thin & when grilled over hot oak fire, dried up & tough to eat. Charizo had a huge amount of pepper skin(s) that were the same texture as roach wings, had to remove from my mouth as I chewed to make sure they were not roach wings. What a waste of farm fresh eggs when cooked with the charizo. I wish I would have asked to look at the fajitas prior to the butcher grabbing them out of a trash can with a plastic bag.
